One thing that I always have on my meals is a greens salad. I am quite a picky eater for vegetables so my wife always comes with new ideas and combinations, and I love them.
This specific salad mixes the deep flavours of blue cheese with a sweet but fresh balsamic berry dressing. The crunchiness of the bacon bits and fresh strawberries will provide flavour explosions, while the avocado makes it smooth, bringing everything together.
Personally, I would go for a greens mix for this one, but the green leaf lettuce will also go well. I wouldn’t choose bitter lettuce for this one.
This dressing is also useful for other salads, and goes really well with strong cheese. You can keep it in the fridge for a while, but I wouldn’t recommend more than a week since it doesn’t have any preservatives.

Strawberry and Greens Salad with Balsamic Berry Dressing

Ingredients
Greens mix
1/2 small avocado cut in little squares
30 g crumbled blue cheese
3-5 strawberries cut in halves
1 tbsp crunchy bacon bits
The amount of dressing you like
- Dressing
1/3 cup balsamic vinegar
1/4 cup berries mix (blueberries, raspberries, strawberries, and blackberries)
40 g honey
Directions
- To make the dressing
- Place all the ingredients in a sauce pan and bring to boil.
- Lower the heat and simmer for 10 minutes while continuously stirring to make a sauce.
- While still hot, strain the sauce to remove the seeds. This will make the dressing be very clean and liquid. Perfect for a salad.
(If you would like to have the seeds and everything in your dressing it’s ok too) - Place it in the fridge in a closed jar until it’s cold. You don’t want to have a hot dressing in your greens salad 😉
- Prepare the Salad
- Now that your dressing is nice and cold, in a bowl place all the salad ingredients and top with the balsamic dressing (it’s not necessary to use it all at once, just use the amount you would like and then store the rest in the fridge). Personally, I like to put some extra virgin olive oil and salt in there, but you can further season it however you like!
- The last step is to toss your salad using two spoons to get it well mixed and ready to eat!
