Summer is finally here and we strive to have refreshing drinks for the heat. With just the right amount of sweetness and acidity, the berries come into play to save you with this awesome and healthy berry smoothie!

Strawberries, raspberries, blueberries, blackberries… They are all so good and tasty that they should be filled with fruit sugar and they are not that healthy, right? But no! One of the properties that are quite unknown is that they have a low sugar content and glycemic index!

I am telling you this because they make an excellent excuse to have a healthy, tasty, sweet and refreshing drink without hurting your beach body (although with the current situation it’s kind of hard to show it).

To give it the right consistency we will use frozen fruit and milk. The bananas are really important to blend everything together, so don’t skip them!

Replacing the right ingredients, you can make this refreshing drink dairy-free or keto-friendly too! (be sure to count the berries carbs correctly and use a low-carb milk replacement)

Either way, this recipe is delicious and extremely easy to make. You just need a blender and to put everything on it!

Healthy Berry Smoothie

The berries come to save you from the heat with this healthy and refreshing smoothie!

Ingredients

  • 300 g frozen mixed berries (or you can just do only one type)

  • 200 g frozen bananas

  • 200 g milk (you can use any dairyb-free option too!)

  • Any sweetener you like such as sugar, honey, Splenda, stevia, erythritol, monk fruit or whichever you like most!
    Add the amount needed to your taste!

Directions

  • Easy, just put everything inside the blender.
  • Blend until you don’t see any whole banana piece.
  • Do not overblend or you will loose the smoothie consistency!
  • If it is too thick, you can add some more milk, or if it is too liquid, you can add some ice cubes into the blender!
  • Serve and enjoy!

One thing that I always have on my meals is a greens salad. I am quite a picky eater for vegetables so my wife always comes with new ideas and combinations, and I love them.

This specific salad mixes the deep flavours of blue cheese with a sweet but fresh balsamic berry dressing. The crunchiness of the bacon bits and fresh strawberries will provide flavour explosions, while the avocado makes it smooth, bringing everything together.

Personally, I would go for a greens mix for this one, but the green leaf lettuce will also go well. I wouldn’t choose bitter lettuce for this one.

This dressing is also useful for other salads, and goes really well with strong cheese. You can keep it in the fridge for a while, but I wouldn’t recommend more than a week since it doesn’t have any preservatives.

Now go and toss your healthy salad!

Strawberry and Greens Salad with Balsamic Berry Dressing

Transform the boring greens to a yummy and fancy salad that will be a game-changer!

Ingredients

  • Greens mix

  • 1/2 small avocado cut in little squares

  • 30 g crumbled blue cheese

  • 3-5 strawberries cut in halves

  • 1 tbsp crunchy bacon bits

  • The amount of dressing you like

  • Dressing
  • 1/3 cup balsamic vinegar

  • 1/4 cup berries mix (blueberries, raspberries, strawberries, and blackberries)

  • 40 g honey

Directions

  • To make the dressing
  • Place all the ingredients in a sauce pan and bring to boil.
  • Lower the heat and simmer for 10 minutes while continuously stirring to make a sauce.
  • While still hot, strain the sauce to remove the seeds. This will make the dressing be very clean and liquid. Perfect for a salad.
    (If you would like to have the seeds and everything in your dressing it’s ok too)
  • Place it in the fridge in a closed jar until it’s cold. You don’t want to have a hot dressing in your greens salad 😉
  • Prepare the Salad
  • Now that your dressing is nice and cold, in a bowl place all the salad ingredients and top with the balsamic dressing (it’s not necessary to use it all at once, just use the amount you would like and then store the rest in the fridge). Personally, I like to put some extra virgin olive oil and salt in there, but you can further season it however you like!
  • The last step is to toss your salad using two spoons to get it well mixed and ready to eat!
